In 1983 Originally, the restaurant was not a restaurant but a café where people gathered after work to let off some steam. After a few years it was clear that the customers wanted something more than beer and soda or hot. So Mieke or 'Ma' went to Ypres on her day off to get a chef's diploma. She succeeded and brasserie de Biskaje was born.
Meanwhile, Bruges is increasingly on the tourist map of an International audience that comes to visit Bruges for the chocolate, lace, culture and eating out. Local residents also appreciate the restaurant for its fair price and good food. To this day, they operate the restaurant with an eye on quality, freshness and service.
